Meet Head Chef Tim at Lanyon Vikings

Introducing you to the one who’s cooking up a storm at Lanyon Vikings!

Head Chef – Tim

Tim has worked for the Vikings Group for 7 years and has brought with him experience from some of Canberra’s finest restaurants.  With the fine dining experience behind him, he gets the most enjoyment from playing around with a good Casserole.  “It’s what I cook for my family and friends.  The complexity you can put into the flavours of a good stew, or having fun with middle eastern flavours in a tagine - that’s when I have fun and love seeing the faces of people who I’m sharing the meal with. I’ve made it for them, it always tastes special”. 

With 7 years at Vikings, Tim has worked across all venues, however, is excited to be able to call Lanyon his own. “I love Vikings. It’s full of people who have a real passion for the brand, our community, and what we do. It really is a family, especially here at Lanyon Vikings.  We all look out for each other.  I love it here”. 

“I love that my food brings people together, that they celebrate their special occasions here. We become a part of their stories. I get to fill their bellies and make everyone feel happy. The one thing everyone has in common across the world is that we eat, I am honoured when people choose to eat the food I make. It really is something I enjoy.”

Tim also carries the record for the best steak across the Vikings Group. According to our Executive Chef, Ben Cridland “Without a doubt, Tim is the best chef on the grill across the group. It hurts all our Chefs when I say that, including me, but he really is the best at cooking steak.”

Tim’s preferred steak: Scotch fillet, medium rare with a creamy pepper sauce. “I shed a single lonely tear when anyone orders a well-done steak, but as long as they enjoy it, it’s all that matters!”

Lanyon Bistro is open for lunch and dinner 7 days a week, we look forward to hearing how much you enjoyed your steak.
